Classic method sparkling wines

Classic method sparkling wines are made from a second fermentation in the bottle and a period of aging on the lees, which gives the wine a fine perlage, aromatic complexity, and good structure.

The classic method in the Mantua area and in Volta Mantovana.

In the Upper Mantua area, and particularly in Volta Mantovana, this type of production remains a niche but is highly interesting in terms of quality. The moraine hills offer well-drained soils rich in minerals, while the proximity of Lake Garda creates a temperate microclimate that favors balanced ripening of the grapes and the maintenance of good acidity.

The most commonly used grape varieties are Chardonnay and Pinot Noir, sometimes combined with Pinot Blanc, which produce elegant, crisp sparkling wines characterized by aromas of white flowers, citrus, and notes of bread crust. Overall, the classic method of Alto Mantovano and Volta Mantovana expresses a restrained and refined style, focused on freshness and balance rather than power, yet strongly rooted in the terroir.
